What even is "natural caramel flavour"?

Pick up almost any treat that markets itself as clean, flip it over, and somewhere in the ingredients, you'll find it: "natural flavour."

It sounds reassuring. It tells you almost nothing.

"Natural flavour" is one of the most quietly unhelpful phrases in food. Trust me, "natural caramel flavour" was not picked from the caramel tree. It can cover a blend of compounds, technically traceable back to something that once grew, then processed so far past its original form that calling it natural is a stretch. It isn't a lie. It just isn't an answer. And when a product is selling itself on being clean, a vague catch-all doing the heavy lifting for the actual flavour is exactly the thing worth questioning.

That's never been how we do things at Wellness by Tess.

Clean ingredients, actually clean

When I say ridiculously clean, I mean you can read every line on the label and know exactly what each one is. Nuts. Cacao. Dates. Real, whole-food ingredients you'd recognise in your own kitchen. No refined sugar, no dairy, no gluten, and no unnamed "flavours" tucked in at the bottom of the list.

So when I wanted a deep, salted-caramel taste in a couple of our treats, reaching for a bottle of manufactured caramel flavour was never on the table. I went looking for the real thing.

That real thing is mesquite.

So, what actually is mesquite?

Mesquite is a fine powder ground from the pods of the mesquite tree. The pods are naturally sweet, and once they're dried and milled, they carry a warm, toffee-caramel flavour with a nutty edge. No sugar caramelised over heat. No lab. Nothing refined. A whole-food ingredient that tastes like caramel entirely on its own.

You'll often see mesquite called a superfood. I'm always a little wary of that word, because it gets stuck on everything and usually means nothing. But mesquite has earned its reputation the honest way. It's a whole food that's been used for generations, and it brings more to the table than just a good flavour. That's a big part of why I chose it over some manufactured stand-in.

It's one of those ingredients that earns its place. Plenty of things get added to treats to prop up flavour or bulk them out. Mesquite is in ours because it genuinely does the job, and it does it honestly.

Where you'll taste it

Two of our treats lean on mesquite for that caramel depth.

The Medjool-date-based caramel in our OG Saltwater Tessy is the obvious one. That rich, salty-sweet, proper-caramel hit comes from mesquite blended with dates and the good stuff, no caramel sauce anywhere in the mix.

Our Salted Caramel Crunch balls uses it too, mixed with cacao and hazelnut so the toffee warmth sits underneath the chocolate.

In both, mesquite is doing real flavour work. Not a flavour that was formulated and bottled. A flavour that grew.

The point

This isn't about making anyone feel guilty over what's in their pantry. It's that you deserve to know what you're actually eating, especially when something is sold to you as clean and good for you.

So next time a label says "natural caramel flavour," it's worth asking the simple question. What is it, really, and where did it come from?

Ours came from a pod on a tree. And it tastes unreal.
